Chicken, quinoa and orange ‘dish’

I couldn’t decide what to call this dish…hence just calling it ‘dish’. I always think stew has a bit of a negative connotation so it didn’t feel right to call it that. So let’s just stick with dish and I’ll get on with it!

Fruit in savoury dishes can be a bit controversial and admittedly, I’m not always a big fan of orange in main courses. However the orange in this dish combined with the honey, tamari (you can use soy sauce if you aren’t coeliac or intolerant to gluten) and sweet potato really works. Be warned though, it is pretty moreish!

This would also make a nice side dish if you wanted to leave out the chicken and serve with duck and salad.

As always, this dish is completely free of dairy and gluten. If you are vegetarian or vegan, simply leave out the chicken and it’s still absolutely delicious.

Ingredients
  • 1 tbsp Coconut oil
  • 2 Chicken breasts cut into chunks
  • 1 tsp Chinese 5 spice
  • 1 tsp Cinnamon
  • 2 cm Fresh ginger grated
  • 2 Garlic cloves grated or crushed
  • 1 Red chilli deseeded and finely chopped
  • 2 Sweet potatoes cut into 2cm pieces
  • 1 Orange Grated and juiced
  • 1 tbsp Clear honey
  • 2 tbsp Tamari
  • 150g Quinoa
  • 1 handful Spinach leaves

  • 1 tbsp Coconut oil
  • 2 Chicken breasts cut into chunks
  • 1 tsp Chinese 5 spice
  • 1 tsp Cinnamon
  • 2 cm Fresh ginger grated
  • 2 Garlic cloves grated or crushed
  • 1 Red chilli deseeded and finely chopped
  • 2 Sweet potatoes cut into 2cm pieces
  • 1 Orange Grated and juiced
  • 1 tbsp Clear honey
  • 2 tbsp Tamari
  • 150g Quinoa
  • 1 handful Spinach leaves

Instructions
  1. Put the prepared sweet potatoes in a large pan and cover with water. Bring to the boil and simmer for 10 minutes.
  2. Place the quinoa in a separate pan, cover with water as per the pack instructions and simmer for around 15 minutes until it is cooked through but still has a slight bite.
  3. In a separate large pan, melt the coconut oil before adding the chicken. Cook for around 3 minutes or until browned before adding the chilli, chinese 5 spice, cinnamon, ginger and garlic. Stir well and cook for a further 2 minutes.
  4. Pour the sweet potatoes into the chicken pan and stir round well. Turn the heat right down and leave while you prepare the orange sauce.
  5. In a small pan, combine the zest and juice of the orange with the honey and tamari. Place on a low heat and warm through for a couple of minutes before pouring the mixture on the chicken and sweet potatoes.
  6. FInally, throw a handful of spinach leaves in with the chicken before stirring in the cooked quinoa. Give it a really good stir round to make sure everything is coated in the orange sauce before serving with asparagus or a side of your choice.
