Coconut Chicken Curry with Peaches

One of my all time favourite home cooked meals prior to discovering my intolerances was my mum’s chicken curry with peaches. So, when I came across a similar dairy free and gluten free recipe in The Food Medic: Recipes & Fitness for a Healthier, Happier You, I had to try it…and it did not disappoint!

I realise that fruit in savoury dishes can be controversial but this really works, particularly when served with roasted butternut squash.

Ingredients
  • 1 tbsp Coconut oil
  • 1 Red onion diced
  • 3 Chicken breasts diced
  • 1 tsp Mild curry powder
  • 2 tbsp Mango chutney
  • 2 tbsp Curry paste (I used Madras)
  • 300 ml Chicken stock
  • 1 x 411g tin Peaches in juice drained
  • 400 ml Light coconut milk
  • Handful of Raisins
  • Handful of Spinach leaves

  • 1 tbsp Coconut oil
  • 1 Red onion diced
  • 3 Chicken breasts diced
  • 1 tsp Mild curry powder
  • 2 tbsp Mango chutney
  • 2 tbsp Curry paste (I used Madras)
  • 300 ml Chicken stock
  • 1 x 411g tin Peaches in juice drained
  • 400 ml Light coconut milk
  • Handful of Raisins
  • Handful of Spinach leaves

Instructions
  1. Melt the coconut oil in a large pan before adding the red onion. Fry on a medium heat for around 5 minutes and then tip in the diced chicken. Cook for another 5 minutes or until browned.
  2. Add the mango chutney, curry powder, curry paste, peaches and chicken stock. Bring to the boil and then reduce the heat to allow it to simmer. Simmer for around 25 minutes without a lid to allow some of the liquid to evaporate.
  3. Pour in the coconut milk, raisins and spinach. Stir well and allow to simmer for another 5 minutes.
  4. Leave to cool slightly before serving with roasted butternut squash and green vegetables.
