How to make Chicken Souvlaki (Greek chicken kebab recipe) | Dairy and gluten free recipe

As a child, my parents often took us to Greece but I don’t think I really appreciated the Greek cuisine until I went to Lindos, Rhodes last year. I fell in love with how simple and light yet incredibly flavoursome Greek food is.

Ever since, I’ve been trying to perfect it myself and I’m slowly getting there! If you want as close to the real thing without having to fly 1,500 miles, give this a go!

How to make Chicken Souvlaki (Greek chicken kebab recipe)
Souvlaki is the Greek name for pieces of meat grilled on a skewer. Make sure you have good quality skewers to hand for this recipe. Cooking it this way ensures the chicken stays juicy and tender. If you struggle with gluten and want to serve this with rice, make sure you choose Tilda which is naturally gluten free.

  • 2 Chicken breasts diced
  • 1/2 Green pepper cut into chunks
  • 1/2 Yellow pepper cut into chunks
  • 1 tsp Oregano dried
  • 2 cloves garlic grated
  • 1 tbsp Coconut oil melted
  • 1 Lemon juiced
  • 3 tsp Red wine vinegar
  • Salt and pepper to taste

Instructions
  1. To make the marinade, combine the oregano, garlic, melted coconut oil, lemon juice and red wine vinegar in a large mixing bowl. Season with salt and pepper.
  2. Add the chicken to the marinade and use your hands to make sure it is completely coated. If you can, leave the chicken to marinade for 1 - 2 hours or even overnight if you are super prepared!

  3. Take a piece of diced chicken and pierce the centre with a skewer, pushing the chicken right up to the top. Take a piece of pepper and do the same. Continue to do this, alternating between chicken and pepper until the skewer is full.

  4. Place the skewers under a preheated grill and cook for approximately 15 minutes or until the juices run clear and the chicken is white inside. Turn once during cooking.
  5. I served mine with grilled aubergine cooked in soy sauce with brown basmati rice and tzatziki (made with coconut yoghurt).
