Teriyaki beef with asian-style broccoli rice | Dairy free recipe

Thanks once again to The Food Medic for inspiring this recipe! I’m not a huge red meat fan but the teriyaki marinade on this was a treat for my taste buds! I marinated the beef overnight but if you don’t have the time, make sure you give it at least two hours.

Dairy free teriyaki beef with asian style broccoli rice

Ingredients
  • 500 g Lean beef steak cut into chunks
  • 1 tsp Coconut oil
Beef marinade
  • 1 Garlic clove grated
  • 1 tbsp Honey
  • 1 tbsp Mirin
  • 1 tbsp Soy sauce reduced salt
Asian-style broccoli rice
  • 1 Broccoli cut into florets
  • 1 Red onion diced
  • 1 Garlic clove grated
  • 1/2 Red cabbage sliced
  • 1 Red pepper cut into strips
  • 1 Courgette peeled into ribbons
  • 2 Spring onions finely chopped
  • 30 g Walnuts (substitute for your favourite!)
  • 1 Lime (zest and juice)
  • 2 tbsp Soy sauce
  • 1/2 tbsp Coconut oil

Instructions
  1. In a bowl, whisk the marinade ingredients together before pouring over the beef. I stored mine in a sealed tupperware container and placed in the fridge overnight but a ziplock bag will do the trick too.

Asian-style broccoli rice
  1. Blitz the broccoli in a food processor (we actually only have a Nutribullet hence why the broccoli is finer than you might expect!).
  2. Heat the coconut oil in a flat bottomed pan. Add the onion and garlic and saute for five minutes. Add the broccoli and continue to cook for another few minutes. To the pan, add the courgette, red pepper, red cabbage, spring onions and walnuts. Mix together and keep on the heat for a couple of minutes.

  3. To the pan, add the zest and juice of the lime and soy sauce. Stir well to ensure all the vegetables are covered. Remove from the heat and set aside
Teriyaki beef
  1. Heat the coconut oil in a griddle pan. Add the beef along with any juices and marinade to the pan. Depending how well done you like your beef, cook for around five minutes turning occasionally.
  2. Serve the beef on top of the broccoli rice and garnish with a little more lime juice. Enjoy!
