Itsu is one of my favourite lunchtime places to eat in Leeds but let’s be honest, it is a little on the pricey side. Lucky for me then, I know the not-so-secret recipe for their teriyaki sauce! In this recipe, I’m using the sauce on grilled salmon but it is equally tasty on chicken and steak.
- 2 x salmon fillets
- 3 tbsp mirin
- 3 tbsp soy sauce
- 1 tbsp coconut sugar
- 2 tsp rice vinegar
- 1 tsp cornflour
- 4cm fresh root ginger
Put the salmon under the grill and cook for around 10 minutes or until it is just cooked in the middle.
Meanwhile, combine all the other ingredients in a pan and slowly bring to the boil while continually stirring. Reduce the heat slightly and simmer for a couple of minutes until the sauce starts to thicken.
Serve the sauce immediately on the salmon. I like to serve with oriental vegetables such as pak choi and okra.
