Sweet and spicy turkey burgers by The Food Medic

This recipe from Food Medic, Dr Hazel Wallace, is proof that having a food intolerance doesn’t have to stop you from eating great food!

I’ve followed The Food Medic on Instagram for a long time now and I love what she stands for. Combining the knowledge she has as a junior doctor with her qualifications in personal training, The Food Medic’s aim is to ‘bridge the gap between mainstream medicine and nutrition’. Certainly something I can get on board with!

Sweet and spicy turkey burger dairy free recipe

Ingredients 

  • 250g lean turkey mince
  • 1/2 red onion, finely chopped
  • 1/2 red pepper, finely chopped
  • 50g sweetcorn
  • 1 tbsp mango chutney
  • 1 tbsp cornflour
  • 1 tbsp coconut oil
  • Salt and black pepper to season

Method:

I love a nice simple method…and this more than ticks that box!

Simply place all the ingredients, excluding the coconut oil, in a mixing bowl and combine. Get a handful of the mixture and shape into a ball before flattening slightly to make a typical burger shape. I managed to get three out of the mixture.

Heat the coconut oil in a griddle pan. Fry the turkey burger for 10 minutes, flipping half way through, until they are fully cooked through.

I served mine with a spinach and rocket salad, crushed avocado, grilled pineapple and sweet potato wedges.
